Mekong Quality Assurance Advisory

Product specifications and on-site verification for food & beverage brands using co-packers.

Defining the spec. Verifying the run.

A bad batch rarely starts with a bad factory. It starts with a loose spec sheet.

In overseas food and beverage manufacturing, the gap between the sample you approved and the product that arrives usually traces back to the contract specification. Where a spec relies on vague language, both sides fill the gaps with their own assumptions, and you only find out when the first commercial run lands.

I created Mekong QA Advisory to close that gap, whether you are establishing specs before your first run or retrofitting detailed Schedules A & B onto an existing co-packer contract when quality issues arise. I write the objective technical standards and verify compliance directly on the factory floor in Southeast Asia, so you keep leverage over your production and your capital.

Core services

Co-Packer QA Architecture

Translating your benchtop recipe into an unshakeable commercial spec without losing its culinary integrity. I lock in your exact flavor, aroma, and mouthfeel alongside rigorous technical standards. Schedule A covers pH, Brix, moisture, viscosity, fill weights, and sensory benchmarks. Schedule B covers sampling and lot release protocols. The plant can then replicate your recipe at mass scale.

Fractional QA Verification

Ongoing in-person plant oversight to prevent flavor drift and quality slippage over time. Combining a trained chef’s palate with hands-on plant floor verification, I make regular on-site visits to your co-packer to confirm that commercial runs match your approved benchmark.

Inspections & Factory Visits

A targeted, single-event line check, line-trial evaluation, or pre-shipment inspection on the factory floor. I evaluate your finished pallets directly against your approved Golden Sample and Schedule A specs, verifying both culinary character and strict technical compliance before final capital is released.

The 3-stage production control pipeline

End-to-end quality assurance, or mid-stream crisis triage. Start at Stage 1 for a new product, or step in at Stage 2 or 3 to triage an active production issue or hold an out-of-spec batch. Strict financial and technical gates protect your capital at every phase.

Stage 1Line trial

Micro-run, about 500–1,000 units

  • Run on actual commercial factory machinery.
  • Air-freight samples to the founder and QA architect.
  • Adjust process specs; sign 3 Golden Samples.
Risk gate 1Commercial deposits and raw material purchases stay frozen until Golden Sample sign-off.

Stage 2Commercial scale

Mass batch, 20,000+ units

  • Full batch produced using locked Stage 1 parameters.
  • Finished pallets wrapped and held at the factory site.
Risk gate 2Container loading blocked. Balance payment withheld pending inspection.

Stage 3Pre-shipment inspection

Floor sampling and release

  • Random sampling off warehouse pallets.
  • Checked against Schedule A and Golden Sample targets.
Risk gate 3Final payment released and container sealed only upon an official PSI pass report.
